Warm Kale-and-Potato Salad with Bacon and Mustard

Ingredients

  • 1 1-pound package steam-in-bag baby potatoes

  • 4 slices bacon, cut into 1-inch pieces

  • 1 shallot, thinly sliced

  • 1 tablespoon whole grain mustard

  • 2 tablespoon apple cider vinegar

  • 2 tablespoon olive oil

  • 1 5-ounce bag baby kale

  • 3 cup (12 ounces) deli-roasted chicken, skin removed, sliced or chopped

  • Kosher salt and freshly ground black pepper

Directions

  1. Microwave potatoes according to package directions. Meanwhile, in a large skillet cook bacon over medium until browned and crisp. Transfer to paper towels to drain, reserving drippings in skillet. Cook shallot in bacon drippings on medium-low 3 to 4 minutes.

  2. Whisk in the mustard, vinegar, and 2 tablespoons olive oil.

  3. Quarter potatoes. Add potatoes, chicken, and bacon to skillet,; heat through. Place kale in an extra-large bowl. Add chicken mixture. Toss to slightly wilt the kale. Season with kosher salt and ground black pepper. Serve warm. Serves 4.
